Chicken Rezala Recipe
Chicken rezala is a delicious and aromatic dish that originated in the Mughlai cuisine of Bengal. - 500 grams chicken, cut into pieces
- 1 cup yogurt
- 1/2 cup cashews, soaked in water
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon nutmeg powder
- 1/2 cup milk
- 4 tablespoons ghee or clarified butter
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- In a blender, grind the soaked cashews into a smooth paste. Set aside.
- In a large bowl, whisk the yogurt until smooth. Add the turmeric powder, red chili powder, garam masala, cardamom powder, nutmeg powder, and salt. Mix well.
- Heat ghee in a deep pan or kadai over medium heat. Add the chopped onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and slit green chilies. Sauté for a minute until fragrant.
- Add the chicken pieces to the pan and cook until they are lightly browned on all
