Ingredients:

  • 4 pounds of boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 bay leaf
  • 4 cups of chicken broth
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Season the chicken breasts with salt and pepper, then add them to the pot. Cook until the chicken is browned on all sides, about 8 minutes.
  4. Add the dried thyme, dried rosemary, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 45 minutes.
  5. Remove the chicken breasts from the pot and shred them using two forks.
  6. Return the shredded chicken to the pot and simmer for an additional 15 minutes.
  7. Remove the bay leaf from the pot and discard.
  8. Ladle the chicken and broth into sterilized canning jars, leaving about 1 inch of headspace.
