- 3 cloves of garlic, minced
- 2 carrots, diced

- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 1 bay leaf
- 4 cups of chicken broth
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, diced carrots, and diced celery to the pot. Cook until the vegetables are softened, about 5 minutes.
- Season the chicken breasts with salt and pepper, then add them to the pot. Cook until the chicken is browned on all sides, about 8 minutes.
- Add the dried thyme, dried rosemary, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 45 minutes.
- Remove the chicken breasts from the pot and shred them using two forks.
- Return the shredded chicken to the pot and simmer for an additional 15 minutes.
- Remove the bay leaf from the pot and discard.
- Ladle the chicken and broth into sterilized canning jars, leaving about 1 inch of headspace.
