Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced
  • 1/4 cup low-sodium chicken broth
  • Fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the dried oregano, paprika, garlic powder, salt, and black pepper.
  3. Place the chicken breasts on a cutting board and drizzle them with olive oil.
  4. Sprinkle the spice mixture evenly over both sides of the chicken breasts, rubbing it in gently.
  5. Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until they develop a golden brown crust.
  6. Transfer the seared chicken breasts to a baking dish and arrange the lemon slices on top.
  7. Pour the chicken broth into the baking dish, around the chicken breasts.
  8. Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and continue baking for an additional 5 minutes to allow the chicken to brown slightly.
  10. Once cooked, remove the chicken from the oven and let it rest for a few minutes.
  11. Garnish with fresh parsley
