Ingredients:

  • 2 cups masa harina (corn flour)
  • 1 1/4 cups warm water
  • 1 cup cooked shredded chicken
  • 1/2 cup refried beans
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup diced onion
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions: How to Cook Chicken Pupusas

  1. In a large bowl, mix the masa harina with the warm water until a soft dough forms. Let it rest for 10 minutes.
  2. In a separate bowl, combine the shredded chicken, refried beans, mozzarella cheese, cilantro, onion, cumin, salt, and pepper. Mix well.
  3. Divide the masa dough into golf ball-sized portions and flatten them into discs with your hands.
  4. Place a spoonful of the chicken filling in the center of each disc and fold the dough over to enclose the filling, forming a ball. Flatten the ball into a thick tortilla shape.
  5. Heat a skillet over medium heat and lightly oil it. Cook the pupusas for about 4-5 minutes on each side, or until golden brown and cooked through.
  6. Serve the chicken pupusas hot with curtido (pickled cabbage slaw) and salsa on the side.
