Chicken Pico De Gallo Recipe

  • 2 boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a small bowl, combine the olive oil, lime juice, cumin, salt, and black pepper. Mix well.
  3. Brush the chicken breasts with the olive oil mixture, making sure to coat both sides.
  4. Grill the chicken for about 8-10 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let it rest for a few minutes.
