Chicken Pastil Recipe

Chicken pastil is a traditional Filipino dish that is often served during special occasions and gatherings. It is a flavorful combination of chicken, rice, and spices, wrapped in banana leaves and steamed to perfection. This dish is not only delicious but also visually appealing, making it a favorite among many Filipinos.

Ingredients:

  • 2 cups cooked rice
  • 1 pound boneless chicken thighs, sliced into thin strips
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup coconut milk
  • Banana leaves, for wrapping

Instructions:

  1. In a large pan, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the chicken strips to the pan and cook until they are no longer pink.
  3. Stir in the turmeric powder, paprika, salt, and black pepper. Cook for another 2 minutes to allow the flavors to meld.
  4. Pour in the coconut milk and simmer for 5 minutes, or until the sauce has thickened slightly.
  5. Take a piece of banana leaf and place a portion of cooked rice in the center. Top it with a generous amount of the chicken mixture.
  6. Fold the banana leaf to enclose the filling, creating a rectangular packet. Secure the edges with toothpicks or kitchen twine.
  7. Repeat the process with the remaining rice and chicken mixture.
  8. Steam the wrapped pastils for about 30 minutes, or until the rice is fully cooked and the flavors have melded together.
