  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, diced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as macaroni or shells)
  • Fresh parsley, chopped (for garnish)


  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Add the sliced carrots, celery, and diced red bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
