Chicken Of The Woods Pasta Recipe

  • 1 pound chicken of the woods mushrooms, cleaned and sliced
  • 8 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the sliced chicken of the woods mushrooms to the skillet and cook for 5-7 minutes until they start to brown.
  4. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes until the mushrooms are tender.
