Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/2 cup dry white vermouth
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions: How to Cook Chicken Martini

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
  2. In a shallow dish, season the flour with salt and pepper. Dredge the chicken breasts in the seasoned flour, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium and add the garlic to the skillet. Cook for about 1 minute, until fragrant.
  5. Deglaze the skillet with the vermouth, scraping up any browned bits from the bottom of the pan. Allow the vermouth to reduce by half.
  6. Add the chicken broth and butter to the skillet, stirring until the butter is melted and the sauce is smooth.
  7. Return the chicken breasts to the skillet and simmer in the sauce for another 2-3 minutes, until heated through.
  8. Sprinkle the chopped parsley over the chicken and sauce before serving.
  9. Enjoy your Chicken Martini with a side of your choice and a glass of chilled white wine!
