- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/2 cup dry white vermouth
- 1/2 cup chicken broth
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions: How to Cook Chicken Martini
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- In a shallow dish, season the flour with salt and pepper. Dredge the chicken breasts in the seasoned flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium and add the garlic to the skillet. Cook for about 1 minute, until fragrant.
- Deglaze the skillet with the vermouth, scraping up any browned bits from the bottom of the pan. Allow the vermouth to reduce by half.
- Add the chicken broth and butter to the skillet, stirring until the butter is melted and the sauce is smooth.
- Return the chicken breasts to the skillet and simmer in the sauce for another 2-3 minutes, until heated through.
- Sprinkle the chopped parsley over the chicken and sauce before serving.
- Enjoy your Chicken Martini with a side of your choice and a glass of chilled white wine!
