- 1/2 cup chicken stock
- 2 tablespoons chopped fresh parsley

- Place each chicken breast between 2 sheets of parchment paper and pound it out to 1/4-inch thick. Season each piece with salt and pepper.
- Place the flour in a shallow plate and dredge each chicken breast in the flour, shaking off the excess.
- In a large sauté pan, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts and cook for 3 minutes on each side, until they are browned and cooked through. Remove the chicken from the pan and set aside.
