  • 4 boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper

  • 1/4 cup olive oil
  • 4 tablespoons unsalted butter
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken stock
  • 2 tablespoons chopped fresh parsley

Instructions: How to Cook Chicken Marsala Barefoot Contessa

  1. Place each chicken breast between 2 sheets of parchment paper and pound them to 1/4-inch thick with a meat mallet. Season each piece with salt and pepper.
  2. Place the flour in a shallow plate and dredge each chicken breast in the flour, shaking off the excess.
