Ingredients:

  • 1 lb chicken breast, cut into thin strips
  • 1 red onion, sliced
  • 2 tomatoes, sliced
  • 1 green bell pepper, sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • 1 cup french fries, cooked
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a large bowl, marinate the chicken strips with soy sauce, vinegar, cumin powder, paprika, minced garlic, salt, and pepper. Let it sit for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over high heat.
  3. Add the marinated chicken strips to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced onions and bell peppers. Sauté until they are slightly softened, about 3-4 minutes.
  5. Add the sliced tomatoes to the skillet and cook for an additional 2 minutes.
  6. Return the cooked chicken to the skillet and stir-fry everything together for another 2 minutes, allowing the flavors to meld.
