Chicken Lomo Saltado Recipe

Ingredients:
- 1 lb chicken breast, cut into thin strips
- 1 red onion, sliced
- 2 tomatoes, sliced
- 1 green bell pepper, sliced
- 3 cloves of garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vinegar
- 1 tablespoon vegetable oil
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups cooked white rice
- 1 cup french fries, cooked
- Fresh cilantro, chopped (for garnish)
Instructions:
- In a large bowl, marinate the chicken strips with soy sauce, vinegar, cumin powder, paprika, minced garlic, salt, and pepper. Let it sit for 10 minutes.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the marinated chicken strips to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onions and bell peppers. Sauté until they are slightly softened, about 3-4 minutes.
- Add the sliced tomatoes to the skillet and cook for an additional 2 minutes.
- Return the cooked chicken to the skillet and stir-fry everything together for another 2 minutes, allowing the flavors to meld.
