Chicken Log Recipe

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 1/4 cup chopped fresh parsley


  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/4 inch.
  3. In a small bowl, combine the olive oil, garlic powder, dried thyme, dried rosemary, salt, and black pepper.
  4. Brush the chicken breasts with the olive oil mixture, making sure to coat both sides.
  5. In another bowl, mix together the grated Parmesan cheese, bread crumbs, and chopped fresh parsley.
  6. Sprinkle the Parmesan mixture evenly over the chicken breasts.
  7. Starting from one end, roll up each chicken breast tightly, like a log.
  8. Secure the chicken logs with toothpicks to hold their shape.
  9. Place the chicken logs on a baking sheet and bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the logs are golden brown.
  10. Remove the toothpicks before serving.
  11. Slice the chicken logs into rounds and serve hot.
