  • 4 boneless, skinless chicken breasts

  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Instructions: How to Cook Chicken Laredo

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 5-6 minutes per side, or until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the onion and garlic. Cook for 2-3 minutes, until softened.
