Chicken Laredo Recipe

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can (14 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken breasts to the skillet and cook for about 5 minutes on each side, or until browned.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion, garlic, and bell peppers. Sauté until the vegetables are tender.
- Add the diced tomatoes, green chilies, cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine.
- Return the chicken breasts to the skillet, nestling them into the sauce.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 15-20 minutes, or until the chicken is
