Chicken Laredo Recipe


Chicken Laredo is a delicious Tex-Mex dish that combines tender chicken with a flavorful sauce made with tomatoes, peppers, and spices. This dish is perfect for a weeknight dinner or a casual gathering with friends and family.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Instructions: How to Cook Chicken Laredo

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 5-6 minutes per side, or until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the onion and garlic. Cook for 2-3 minutes, until softened.
  5. Add the diced bell peppers to the skillet and cook for another 2-3 minutes.
  6. Stir in the diced tomatoes, cumin, chili powder, salt, and pepper. Cook for 5 minutes, allowing the flavors to meld together.
