Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • Juice of 2 lemons
  • 1 cup shredded Provolone cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Place the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
  3. Pound the chicken breasts to an even thickness, then season them with salt and pepper.
  4. Dredge each chicken breast in flour, dip it in the beaten eggs, and coat it with breadcrumbs.
  5. In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  7. Add the white wine, chicken broth, and lemon juice to the skillet. Bring the mixture to a simmer and cook for 5 minutes to reduce the sauce slightly.
