Chicken Kale Mushroom Recipe

  • 2 boneless, skinless chicken breasts
  • 2 cups kale, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and dried thyme.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, until browned.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the minced garlic and sliced mushrooms. Cook for 5 minutes, until the mushrooms are tender.
  7. Add the chopped kale to the skillet and cook for an additional 2 minutes, until wilted.
  8. Return the chicken breasts to the skillet, placing them on top of the mushroom and kale mixture.
  9. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the chicken is cooked through.
