  • 1 pound chicken gizzards
  • 1 pound chicken hearts
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped

  • 1 teaspoon cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons chopped fresh parsley


  1. Start by cleaning the chicken gizzards and hearts. Remove any excess fat or membranes and rinse them thoroughly under cold water.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and translucent.
  3. Add the chicken gizzards and hearts to the skillet and cook for about 5 minutes, stirring occasionally, until they start to brown.
