Chicken fried rice is a delicious and satisfying dish that combines tender chicken, flavorful vegetables, and fluffy rice. Ingredients:

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1/2 cup frozen peas
  • 1/2 cup carrots, diced
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions:

  1. Preheat the griddle to medium-high heat.
  2. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Set aside.
  3. Spread the cooked rice evenly on the griddle and let it cook for a few minutes until it starts to get slightly crispy.
  4. Push the rice to one side of the griddle and add the diced chicken, frozen peas, carrots, green onions, and minced garlic to the other side.
  5. Cook the chicken and vegetables until they are heated through and slightly charred, stirring occasionally.
  6. Push the chicken and vegetables to the side with the rice and pour the beaten eggs onto the empty side of the griddle.
  7. Scramble the eggs until they are fully cooked, then mix them with the rice, chicken, and vegetables.
  8. Pour the sauce mixture over the rice mixture and stir everything together until well combined.
  9. Season with salt and pepper to taste.
