Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa (optional)

Instructions:

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a small bowl, combine the chili powder, cumin, paprika, garlic powder, salt, and black pepper. Mix well.
  3. Season the chicken breasts with the spice mixture on both sides.
  4. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through. Remove from heat and let them rest for a few minutes.
  5. In the meantime, heat the olive oil in a large skillet over medium heat.
  6. Add the sliced bell peppers and onion to the skillet and sauté until they are tender and slightly caramelized, about 8-10 minutes.
  7. Slice the grilled chicken breasts into thin strips.
