Chicken Curry Nigerian Recipe


Chicken curry is a popular Nigerian dish that is known for its rich and flavorful taste.   • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons ginger, grated
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish


  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until they become translucent.
  3. Add the minced garlic and grated ginger to the pot and cook for another minute.
  4. Add the chicken pieces to the pot and cook until they are browned on all sides.
  5. Stir in the chopped tomatoes, tomato paste, curry powder, thyme, paprika, cayenne pepper (if using), salt, and pepper. Cook for a few minutes until the spices are fragrant.
  6. Pour in the chicken broth and coconut milk, and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and let the curry simmer for about 30 minutes or until the chicken is cooked through and tender.
  8. Taste and adjust the seasoning if needed.
