Instructions:
- Place the chicken breasts between two sheets of plastic wrap and pound them to 1/4-inch thickness using a meat mallet or rolling pin.
- In a shallow dish, combine the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.
