Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, butterfly each chicken breast by cutting horizontally through the center, but not all the way through, so that you can open it like a book.
  3. In a bowl, combine the spinach, feta cheese, sun-dried tomatoes, garlic, basil, parsley, salt, and pepper.
  4. Divide the filling evenly among the chicken breasts, spreading it over one side of each breast.
  5. Carefully fold the other side of each chicken breast over the filling, creating a roll. Secure the rolls with kitchen twine or toothpicks.
  6. In an oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken rolls and sear them on all sides until golden brown, about 2 minutes per side.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the chicken from the oven and let it rest for a few minutes before slicing.
