Chicken Artichoke Mushroom Lemon Recipe

  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup canned artichoke hearts, drained and quartered
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and dried thyme.
  3. In a large oven-safe skillet, heat the olive oil and butter over medium-high heat.
  4. Add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the sliced mushrooms and minced garlic. Sauté for about 3-4 minutes, or until the mushrooms are tender.
  7. Add the artichoke hearts, lemon juice, lemon zest, and chicken broth to the skillet. Stir well to combine.
  8. Return the chicken breasts to the skillet, nestling them into the mushroom and artichoke mixture.
  9. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  10. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
