Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1/2 cup cashew nuts, soaked in water
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions: How to Cook Chicken Angara

  1. In a blender, combine the soaked cashew nuts and yogurt. Blend until smooth and set aside.
  2. Heat oil in a large pan over medium heat. Add cumin seeds and sauté until they start to splutter.
  3. Add the chopped onions and cook until they turn golden brown.
  4. Stir in the ginger-garlic paste and cook for another 2 minutes.
  5. Add the tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil starts to separate from the masala.
  6. Add the chicken pieces and cook until they are no longer pink.
  7. Pour in the cashew-yogurt mixture and mix well. Cover and simmer for 15-20 minutes, stirring occasionally.
  8. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
