- 2 boneless, skinless chicken breasts
- 1 cup farro
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
- Season the chicken breasts with salt, pepper, and paprika.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-8 minutes per side, or until cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the farro to the skillet and stir to coat it with the onion and garlic mixture.
- Pour in the chicken broth and add the dried thyme. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Simmer for about 20-25 minutes, or until the farro is tender and has absorbed most of the liquid.
- While the farro is cooking, slice the cooked chicken breasts into thin strips.
- Once the farro is cooked, remove the skillet from the heat and let it sit, covered, for a few minutes.
- Fluff the farro with a fork and divide it onto plates. Top with the sliced chicken breasts.
