Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, add the chicken pieces and cover with water. Bring to a boil and let simmer for about 30 minutes, or until the chicken is cooked through. Remove the chicken from the pot and set aside to cool. Once cooled, shred the chicken into bite-sized pieces.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Gradually add the milk and stir until a dough forms. Roll out the dough on a floured surface and cut into small dumpling shapes.
  3. In the same pot used to cook the chicken, melt the butter over medium heat. Add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  4. Add the chicken broth, bay leaf, dried thyme, and shredded chicken to the pot. Bring to a boil and then reduce heat to low. Simmer for 30 minutes to allow the flavors to meld together.
  5. Drop the dumplings into the pot, one at a time, making sure they are submerged in the broth. Cover the pot and cook for an additional 15 minutes
