Prep Time: 15 minutes Cook Time: 30 minutes

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

  1. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Cook for 2-3 minutes, or until the broth has reduced slightly.
  4. Reduce the heat to low and stir in the heavy cream. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
  5. Stir in the grated Parmesan cheese until melted and smooth. Return the chicken breasts to the skillet and spoon the sauce over the top.
  6. Cover the skillet and simmer for 5-10 minutes, or until the chicken is heated through and the flavors have melded together.
  7. Garnish with chopped fresh parsley before serving.
