Chicken Albondigas Recipe

- 1/4 teaspoon black pepper
- 1 egg, beaten
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1/2 cup diced carrots
- 1/2 cup diced zucchini
- 1/4 cup chopped fresh parsley
- 1 tablespoon lime juice
Instructions:
- In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, cilantro, cumin, oregano, salt, pepper, and beaten egg. Mix well until all the ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.
- In the same pot, add the chicken broth, diced tomatoes, carrots, and zucchini. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.
