Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup diced carrots
  • 1/2 cup diced zucchini
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lime juice

Instructions:

  1. In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, cilantro, cumin, oregano, salt, pepper, and beaten egg. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove the meatballs from the pot and set aside.
  4. In the same pot, add the chicken broth, diced tomatoes, carrots, and zucchini. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.
