  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup Riesling wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped shallots
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley


  1. In a shallow dish, mix together the flour, salt, and black pepper.
  2. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and cook until browned on both sides, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the butter, mushrooms, and shallots.
  7. Cook until the mushrooms are tender and the shallots are translucent, about 3-4 minutes.
  8. Add the Riesling wine to the skillet and cook for 2 minutes, scraping up any browned bits from the bottom of the skillet.
  9. Add the chicken broth and bring to a simmer.
  10. Return the chicken breasts to the skillet and simmer for 10-15 minutes, or until the chicken
