- 4 boneless, skinless chicken breasts
- 1 cup fresh or frozen cherries, pitted
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, garlic, ginger, red pepper flakes (if using), salt, and pepper. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes on each side, or until browned and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add the cherries and cook for 2-3 minutes, until they start to soften.
- Pour the soy sauce mixture into the skillet with the cherries. Stir well and bring to a simmer. Cook for 2-3 minutes, or until the sauce thickens.
- Return the chicken to the skillet and coat it with the cherry sauce. Cook for an additional 2-3 minutes, or until the chicken is heated through and fully coated with the sauce.
- Remove from heat and garnish with sesame seeds.
