Cherry Blossom Chicken is a delightful and flavorful dish that combines the sweetness of cherries with the savory taste of chicken. This recipe is perfect for a special occasion or when you want to impress your guests with a unique and delicious meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cherries, pitted
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, garlic, ginger, red pepper flakes (if using), salt, and pepper. Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes on each side, or until browned and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the cherries and cook for 2-3 minutes, until they start to soften.
  4. Pour the soy sauce mixture into the skillet with the cherries. Stir well and bring to a simmer. Cook for 2-3 minutes, or until the sauce thickens.
  5. Return the chicken to the skillet and coat it with the cherry sauce. Cook for an additional 2-3 minutes, or until the chicken is heated through and fully coated with the sauce.
  6. Remove from heat and garnish with sesame seeds.
  7. Serve the Cherry Blossom Chicken hot with steamed rice or your favorite side dish.
