  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 8 ounces sliced mushrooms
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Chopped fresh parsley, for garnish


  1. In a shallow dish, combine the flour, salt, black pepper, and dried oregano.
  2. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, melt the butter over medium heat.
  7. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-6 minutes.
  8. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to release any browned bits.
  9. Bring the mixture to a simmer and cook for 5 minutes to reduce the sauce slightly.
  10. Stir in the heavy cream and return the chicken breasts to the skillet.
  11. Cook for an additional 5-7
