  • 8 ounces of penne pasta
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 2 chipotle peppers in adobo sauce, minced
  • 1 teaspoon of adobo sauce (from the chipotle peppers can)
  • 1 cup of shredded Monterey Jack cheese
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.
  4. Add the heavy cream, chicken broth, minced chipotle peppers, and adobo sauce to the skillet. Stir well to combine.
  5. Bring the mixture to a simmer and cook for 5 minutes, or until the sauce has slightly thickened.
