Ingredients:
- 8 ounces of penne pasta
- 2 boneless, skinless chicken breasts
- 1 tablespoon of olive oil
- 1 tablespoon of butter
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of chicken broth
- 2 chipotle peppers in adobo sauce, minced
- 1 teaspoon of adobo sauce (from the chipotle peppers can)
- 1 cup of shredded Monterey Jack cheese
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Cook the penne pasta according to the package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
