  • 4 bone-in, skin-on chicken thighs

  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, paprika, thyme, and oregano.
  3. Heat the olive oil in a cast iron skillet over medium-high heat.
  4. Add the chicken thighs to the skillet, skin side down, and cook for about 5 minutes until the skin is crispy and golden brown. Flip the chicken and cook for an additional 3 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the diced onion, minced garlic, and diced red bell pepper. Sauté for about 5 minutes until the vegetables are softened.
  7. Add the rice to the skillet and stir to coat it with the vegetable mixture.
  8. Pour in the chicken broth and bring it to a boil.
