The Caribbean chicken soup is a flavorful and comforting dish that combines the vibrant flavors of the Caribbean with tender chicken and hearty vegetables. This soup is perfect for those chilly evenings when you crave a taste of the tropics. With a prep time of 15 minutes and a cook time of 1 hour, this recipe serves 4 people.


  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, diced
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


  1. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onion and garlic. Sauté until the onion is translucent.
  3. Add the red and green bell peppers, carrot, and diced tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Return the chicken to the pot and add the chicken broth, coconut milk, curry powder, thyme, and paprika. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the flavors have melded together.
  6. Serve the Caribbean chicken soup hot, garnished with fresh cilantro.
