Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 4 bone-in, skin-on chicken drumsticks
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup white vinegar
  • 1/4 cup cherry peppers, sliced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Season the chicken thighs and drumsticks with salt and pepper. Dredge them in flour, shaking off any excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  4. Add the sliced bell peppers to the skillet and cook for an additional 5 minutes, until they start to soften.
  5. Pour in the chicken broth, white wine, and white vinegar. Stir in the sliced cherry peppers, dried oregano, and dried thyme. Bring the mixture to a simmer.
