Carmine’S Chicken Scarpariello Recipe

Ingredients:
- 4 bone-in, skin-on chicken thighs
- 4 bone-in, skin-on chicken drumsticks
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup chicken broth
- 1/2 cup white wine
- 1/4 cup white vinegar
- 1/4 cup cherry peppers, sliced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1/4 cup fresh parsley, chopped
Instructions:
- Season the chicken thighs and drumsticks with salt and pepper. Dredge them in flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the sliced bell peppers to the skillet and cook for an additional 5 minutes, until they start to soften.
- Pour in the chicken broth, white wine, and white vinegar. Stir in the sliced cherry peppers, dried oregano, and dried thyme. Bring the mixture to a simmer.
