Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional for a bit of heat)

Instructions: How to Cook Calabash Chicken

  1. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.
  2. In a shallow dish, pour the buttermilk and add the chicken breasts. Let them marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. In another shallow dish, combine the flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.
