Prep Time: 15 minutes Cook Time: 20 minutesIngredients:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional for a bit of heat)
- Vegetable oil for frying
Instructions: How to Cook Calabash Chicken
- Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.
- In a shallow dish, pour the buttermilk and add the chicken breasts. Let them marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- In another shallow dish, combine the flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
- Remove the chicken breasts from the buttermilk, allowing any excess to drip off. Dredge each piece in the seasoned flour mixture, making sure to coat evenly.
- Carefully place the coated chicken breasts in the hot oil and fry for about 5-6 minutes per side, or until golden brown and cooked through.
- Transfer the fried chicken to a paper towel-lined plate to drain any excess oil.
- Serve the Calabash Chicken hot with your favorite sides, such as mashed potatoes, coleslaw, or cornbread. Enjoy!
