  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. In a bowl, toss the chicken pieces with Cajun seasoning until well coated.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat.
  3. Add the chicken to the pot and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
  4. In the same pot, add the diced onion, bell peppers, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  5. Add the diced tomatoes, chicken broth, dried thyme, dried oregano, paprika, and cayenne pepper to the pot. Stir well to combine.
  6. Return the chicken to the pot and season with salt and pepper to taste.
  7. Bring the stew to a boil, then reduce the heat to low
