Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  2. Add the chicken breasts to the pot and cook until they are browned on all sides.
  3. Pour in the chicken broth and water, and add the carrots, celery, bay leaf, dried thyme, salt, and black pepper. Bring the mixture to a boil.

  5. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
