Black Rice Recipe Chicken

  • 1 cup black rice
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste


  1. Cook the black rice according to the package instructions. Set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
  4. Add the diced red bell pepper, broccoli florets, sliced carrots, and peas to the skillet. Cook until the vegetables are tender-crisp, about 5-7 minutes.
  5. Meanwhile, slice the cooked chicken breasts into thin strips.
  6. Add the cooked black rice and sliced chicken to the skillet with the vegetables. Stir in the soy sauce and sesame oil. Cook for an additional 2-3 minutes, until everything is well combined and heated through.
