Black Rice Recipe Chicken

Ingredients:
- 1 cup black rice
- 2 chicken breasts, boneless and skinless

- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 cup peas
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions:
- Cook the black rice according to the package instructions. Set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
- Add the diced red bell pepper, broccoli florets, sliced carrots, and peas to the skillet. Cook until the vegetables are tender-crisp, about 5-7 minutes.
- Meanwhile, slice the cooked chicken breasts into thin strips.
- Add the cooked black rice and sliced chicken to the skillet with the vegetables. Stir in the soy sauce and sesame oil. Cook for an additional 2-3 minutes, until everything is well combined and heated through.
- Season with additional salt and pepper to taste.
