Bibibop Spicy Chicken is a delicious Korean-inspired dish that combines tender chicken, fresh vegetables, and a spicy sauce. Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 cup cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup julienned carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds

Instructions:

  1. In a small bowl, whisk together soy sauce, gochujang, honey, sesame oil, garlic, and ginger to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and place them in a ziplock bag. Pour the marinade over the chicken, seal the bag, and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.

  6. Place the cooked chicken on top of the vegetables and sprinkle with sesame seeds.
