Babe’S Chicken Corn Recipe


Babe's Chicken Corn is a delicious and comforting dish that combines the sweetness of corn with the savory flavors of chicken. It is a perfect dish for any occasion, whether it's a family dinner or a potluck gathering. The prep time for this recipe is 15 minutes and the cook time is 30 minutes.


  • 4 boneless, skinless chicken breasts
  • 2 cups frozen corn kernels
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika


  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat some oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  3. Add the frozen corn kernels to the skillet and cook for an additional 2 minutes.
  4. In a mixing bowl, combine the mayonnaise, sour cream, shredded cheddar cheese, chopped parsley, salt, black pepper, and paprika. Mix well.
  5. Place the chicken breasts in a baking dish and spread the corn mixture evenly over the top of each chicken breast.
  6. Spoon the mayonnaise mixture over the corn-topped chicken breasts, spreading it to cover the entire surface.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the top is golden brown.
  8. Remove from the oven and let it rest for a few minutes before serving.
  9. Garnish with additional chopped parsley, if desired, and enjoy
