Jamaican Baked Chicken is a flavorful and delicious dish that combines the bold flavors of the Caribbean with the tenderness of baked chicken. Ingredients:

  • 4 chicken leg quarters
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon thyme
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the soy sauce, olive oil, brown sugar, thyme, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to create a marinade.
  3. Place the chicken leg quarters in a large ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, ensuring it is evenly coated. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper or aluminum foil.
  5. Bake the chicken in the preheated oven for 40-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
  6. Remove the chicken from the oven and let it rest for a few minutes before serving.
