  • 1 whole chicken, about 3-4 pounds
  • 1 cup Chinese rice wine
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


  1. In a large bowl, combine the Chinese rice wine, soy sauce, minced garlic, grated ginger, brown sugar, sesame oil, salt, and black pepper. Mix well to combine.
  2. Place the whole chicken in a resealable plastic bag or a large container. Pour the marinade over the chicken, making sure it is fully submerged. Seal the bag or cover the container and refrigerate for at least 4 hours or overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade and place it on a baking dish or roasting pan. Reserve the marinade for basting.
  5. Bake the chicken in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the reserved marinade every 15 minutes to keep it moist and flavorful.
