Ingredients:

  • 1 lb flank steak
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup baby spinach leaves
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions: How to Cook Steak Pinwheels

  1. Preheat your oven to 400°F (200°C).
  2. Place the flank steak on a cutting board and slice it horizontally to butterfly it, being careful not to cut all the way through.
  3. Using a meat mallet, pound the steak to an even thickness.
  4. In a small bowl, mix together the sun-dried tomatoes, spinach, feta cheese, garlic, olive oil, salt, and pepper.
  5. Spread the filling mixture evenly over the steak.
  6. Roll up the steak tightly, starting from one end to create a pinwheel shape.
  7. Secure the steak with kitchen twine or toothpicks to hold the pinwheel shape.
  8. Heat a skillet over medium-high heat and sear the steak pinwheels on all sides until browned, about 2-3 minutes per side.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the steak reaches your desired level of doneness.
  10. Remove the steak pinwheels from the oven and let them rest for a few minutes before slicing into rounds.
