- Salt and pepper to taste
- 8 small flour tortillas
- 2 tablespoons olive oil
Instructions: How to Cook Rotel Chicken Quesadilla
- In a large mixing bowl, combine the shredded chicken, Rotel tomatoes, cheddar cheese, Monterey Jack cheese, cilantro, cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients.
- Place a tortilla on a flat surface and spoon a generous amount of the chicken mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape.
