- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 12 corn tortillas
- Salt and pepper to taste
Instructions: How to Cook Ortega Chicken Enchilada
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large bowl, combine the shredded chicken, diced green chilies, half of the cheddar cheese, half of the Monterey Jack cheese, cilantro, cumin, garlic powder, onion powder, salt, and pepper. Mix well to combine.
- Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
- Place a spoonful of the chicken mixture in the center of each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in the prepared baking dish.
- Pour the red enchilada sauce over the top of the enchiladas, spreading it evenly. Sprinkle the remaining cheddar and Monterey Jack cheese on top.
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
