Low FODMAP Crockpot Chicken Recipe

- 2 lbs boneless, skinless chicken breasts
- 1 cup low FODMAP chicken broth
- 1 cup diced carrots
- 1 cup diced zucchini
- 1 cup diced bell peppers
- 1 tsp garlic-infused olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions: How to Cook Low Fodmap Crockpot Chicken
- Place the chicken breasts at the bottom of the crockpot.
- Add the diced carrots, zucchini, and bell peppers on top of the chicken.
- In a small bowl, mix the chicken broth, garlic-infused olive oil, oregano, thyme, salt, and pepper.
- Pour the broth mixture over the chicken and vegetables in the crockpot.
- Cover and cook on low for 4 hours or until the chicken is cooked through and vegetables are tender.
- Once cooked, shred the chicken using two forks.
- Serve the chicken and vegetables over rice or quinoa, if desired.
